Tighten up Codable compile time assistance

• Fixes Improve Analytics.track(name:properties:) to get compile time assurances that properties will encode #197
• Moves [String: Any] parameters to [String: Codable] to allow better compile time checking.
• Updates objc methods to convert between the two types but allow pass-thru.
