Update boltzmann wealth model example for mesa 3.1.4

Description

Current example works with mesa 2.0 and a lot of changes have been made to the mesa core implementation since then.

Changes

• add solara visualization support
• update the code by implementing new features introduced in the mesa 3.0 onwards
• update the Readme file
• update the requirements.txt

Okay, transferred the issue to that repo. Maybe it’s easiest to start with the one from Mesa itself and then add the network stuff back in.
