models(gallery): add hermes-2-theta-llama-3-70b

This PR adds https://huggingface.co/NousResearch/Hermes-2-Theta-Llama-3-70B-GGUF to the gallery, and sets model default to disable mixed_grammar, however, it's left as a comment if the user wants to override model settings
