Fix offline mapping instructions

Per issue https://github.com/hello-robot/stretch_ros2/issues/137, the mapping step of the [Mapping and Nav Demo](https://docs.hello-robot.com/0.3/getting_started/demos_mapping_and_navigation/) will be using a new controller scheme. Once the upstream issue is fixed, the instructions in this tutorial should be updated.
