[DOCS] Avoid tables in ingest processor parameter docs

The parameter reference docs for our ingest processors uses a table. This format is difficult to edit and misses some important information, such as data type.

We should consider converting these docs to our standard definition-style list. This would require updating the common-options.asciidoc file currently included in most of the processor docs.

We'll likely need to reformat these files as part of an upcoming docs system migration. Rather than refactor these docs twice, I'm going to close this issue.
