Update proxy version in go/xorm example

• updates go/xorm example to use latest proxy
• updates prefixes in jsonb indexes to table/column.
• update docker compose file with dataset id env var

Note: until fix lands, dataset, clients etc need to be done via cargo run on main.

i.e in packages/cipherstash-cli run cargo run --bin stash datasets create .... etc.

TODO: bring over similar jsonb op tests that have been added to the identitii poc for new ops.

FYI, we'll need to hold off merging this until the fixes have landed.

We can't ship updates to example apps until all the components are publicly available.

This PR #47 updated everything that needed to be updated
