looks good, would just adjust the placeholder relay urls to still have the pubkeys for completeness like https://github.com/Commit-Boost/commit-boost-client/blob/main/examples/configs/custom_chain.toml#L11

This closes #333 by adding some example configs and their corresponding Docker compose file output, along with explanations of the various components needed by / produced by the CLI.
Side-effect: this also fixes #342 which is just a one-word change so I'm just putting it in here.
